Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a mixing bowl, cream together softened butter, granulated sugar, and dark brown sugar until fluffy.
- Mix in the egg, concentrated apple juice, and vanilla extract until combined.
- Gradually add flour, spices, baking soda, baking powder, and salt; mix until just incorporated.
- Gently fold in the diced green apples.
- Scoop rounded balls of dough onto the prepared baking sheet with space between each cookie.
- Bake for about 12 minutes until lightly golden around the edges; cool on wire racks.
- For frosting, beat cream cheese and butter until smooth; add caramel sauce and vanilla extract.
- Frost cooled cookies generously before topping with streusel or extra caramel sauce.
