- 1 cup rolled oats
- 2 cups non-dairy milk (soy or almond)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/8 teaspoon salt
- 2 ripe bananas
- 1–2 tablespoons refined coconut oil
- 2 tablespoons maple syrup (plus extra for topping)
Instructions
- In a saucepan, combine rolled oats and non-dairy milk. Bring to a boil over medium heat.
- Reduce heat to low and stir in cinnamon, vanilla extract, and salt. Simmer until thickened.
- Meanwhile, heat coconut oil and maple syrup in a large sauté pan over medium heat. Add sliced bananas and cook for about 5 minutes on each side until golden brown.
- Serve the oatmeal in bowls topped with caramelized bananas and drizzle with additional maple syrup if desired.
