  • 2 lbs stewing beef, cut into cubes
  • 1 tablespoon vinegar or lime juice
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • 2 carrots, chopped
  • 2 cups beef broth or water
  • 1 can (14 oz) diced tomatoes
  • Cooked white rice for serving

Instructions

  1. Clean beef using vinegar or lime juice; rinse and pat dry. Marinate with salt, black pepper, allspice, and paprika for at least 30 minutes.
  2. In a large pot, heat vegetable oil over medium-high heat. Brown marinated beef on all sides; remove from pot.
  3. Sauté onion, garlic, and thyme until softened (about 5 minutes). Stir in tomato paste and diced tomatoes; cook for an additional 3 minutes.
  4. Return beef to pot with broth (or water). Cover and simmer on low for 1.5 to 2 hours until tender.
  5. Add chopped carrots during the last 30 minutes of cooking.
  6. Serve hot over fluffy white rice.
