Ingredients
- 2 lbs stewing beef, cut into cubes
- 1 tablespoon vinegar or lime juice
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme
- 2 carrots, chopped
- 2 cups beef broth or water
- 1 can (14 oz) diced tomatoes
- Cooked white rice for serving
Instructions
- Clean beef using vinegar or lime juice; rinse and pat dry. Marinate with salt, black pepper, allspice, and paprika for at least 30 minutes.
- In a large pot, heat vegetable oil over medium-high heat. Brown marinated beef on all sides; remove from pot.
- Sauté onion, garlic, and thyme until softened (about 5 minutes). Stir in tomato paste and diced tomatoes; cook for an additional 3 minutes.
- Return beef to pot with broth (or water). Cover and simmer on low for 1.5 to 2 hours until tender.
- Add chopped carrots during the last 30 minutes of cooking.
- Serve hot over fluffy white rice.
