- 1/2 cup butter
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 eggs
- 2 1/2 cups all-purpose flour

- 1 1/2 cups mashed bananas (about 3–4 medium)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp ground all spice
- 1 cup shredded carrots
- 8 oz cream cheese
- 1/2 cup butter (for frosting)
- 1 cup powdered sugar
- 1 tsp vanilla extract (for frosting)
- 3/4 tsp ground cinnamon (for frosting)
- 1/2 cup crushed pecans (optional)
- 1/4 cup shredded carrots (optional for frosting)
Instructions
- Preheat your oven to 350°F (175°C). Grease two loaf pans or line with parchment paper.
- In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in mashed bananas and vanilla extract.
- In another bowl, whisk together all-purpose flour, baking soda, salt, ground cinnamon, nutmeg, ginger, and all spice until combined.
- Gradually add the dry mixture to the wet mixture and fold in shredded carrots until just combined.
- Pour batter into prepared loaf pans and bake for about 35 minutes or until a toothpick inserted into the center comes out clean.
- While baking, prepare the cream cheese frosting: beat cream cheese and butter until smooth; gradually mix in powdered sugar and ground cinnamon.
- Allow the loaves to cool for about 10 minutes before transferring to wire racks. Frost once cooled.
