- 1 stick salted butter (softened)
- ⅔ cup granulated sugar
- ⅓ cup dark brown sugar
- 1 tsp vanilla extract
- 1 tsp almond extract
- 1 large egg
- 1½ cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup chocolate chips (milk or semi-sweet)
- 2 oz chopped bittersweet chocolate
- ¼ cup chopped pitted cherries (patted dry)
- ⅓ cup chopped almonds
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine flour, salt, and baking soda; set aside.
- In a stand mixer, cream softened butter with granulated and brown sugars until light and fluffy. Add vanilla and almond extracts, then mix in the egg until well combined.
- Gradually add dry ingredients to the wet mixture until just combined.
- Gently fold in chocolate chips, chopped bittersweet chocolate, almonds, and cherries.
- Chill dough balls in the refrigerator for at least one hour.
- Bake cookies for 10-12 minutes until edges are golden brown. Cool on the tray before serving.
