Ingredients
- 1 pound lean ground chicken
- 2 green onions (diced)
- 2 tablespoons diced shallot
- 2 teaspoons minced garlic
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon Mexican oregano
- 1/4 cup cilantro (chopped)
- 2 pasilla peppers (or similar)
- Chicken hamburger buns
- Light mayonnaise
Instructions
- In a mixing bowl, combine the ground chicken with green onions, shallots, garlic, chili powder, cumin, oregano, and cilantro. Mix gently until just combined.
- Form the mixture into four patties and place them in the freezer while you preheat the grill.
- Roast the pasilla peppers on medium-high heat until charred on all sides. Cover to steam them afterward.
- Grill the chicken patties for about 5–7 minutes on each side until cooked through.
- Prepare chipotle mayonnaise by mixing light mayonnaise with chopped chipotles and lime juice.
- Serve burgers on buns topped with roasted peppers and chipotle mayo.
