- 1/2 cup solid coconut oil
- 1/2 cup unsalted butter (room temperature)
- 1 packed cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs (room temperature)
- 1 teaspoon baking soda
- 3 cups old-fashioned oats
- 1–1/2 cups all-purpose flour
- 2 cups chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together solid coconut oil, butter, brown sugar, and granulated sugar until smooth.
- Add in eggs and mix until well combined.
- Incorporate baking soda, oats, and flour into the mixture until just blended.
- Fold in chocolate chips gently.
- Chill the dough for at least one hour.
- Scoop out dough and roll into balls; place on a lined baking sheet.
- Bake for 13–15 minutes until edges are golden but centers remain soft.
- Let cool slightly before transferring cookies to a rack.
