Ingredients

  • 1/4 cup chopped pecans
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup sunflower seeds
  • 8 ounces chopped turkey bacon
  • 1 cup Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons allulose (or another sweetener)
  • 1 teaspoon dijon mustard
  • 1 teaspoon salt

Instructions

  1. Wash and chop the broccoli into bite-sized pieces and slice the red onion thinly.
  2. Cook turkey bacon in a skillet over medium heat until crispy, then chop into small pieces.
  3. In a large mixing bowl, combine broccoli, onion, pecans, cheddar cheese, sunflower seeds, and turkey bacon; toss to mix.
  4. In another bowl, whisk together Greek yogurt, apple cider vinegar, allulose, dijon mustard, and salt until smooth.
  5. Pour dressing over the salad base and gently mix to coat all ingredients evenly.
  6. Chill in the refrigerator for about 10 minutes before serving.
