- 2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup fresh or canned pineapple, diced
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 teaspoon ground ginger
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Cook the chicken pieces until browned and cooked through; then remove from the pan.
- Sauté onions and garlic until fragrant.
- Stir in rice, broth, soy sauce, honey, ginger, salt, and pepper; bring to a boil then simmer covered for about 15-20 minutes.
- Fold in pineapple and red bell pepper; return chicken to the pan and heat through before serving.
