- 4 cups coconut milk beverage
- 3 ounces dark chocolate chips or bar
- ¾ cup chia seeds
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
Instructions
- Grind the chia seeds into flour using a spice grinder for a smoother texture.
- In a small saucepan, combine coconut milk, cocoa powder, salt, and sugar. Heat over medium-low until warm and sugar melts, about five minutes. Remove from heat and stir in dark chocolate until melted. Let cool for about 10 minutes.
- Add ground chia seeds, cinnamon, and vanilla extract to the mixture. Whisk thoroughly until well combined.
- Pour the pudding into individual glasses or bowls and refrigerate for at least one hour to set.
- Top with your choice of fresh berries, nuts, or shredded coconut before serving.
