- 1 cup all-purpose flour
- 1/3 cup cold butter (cubed)
- 1/4 cup sugar
- 1/4 tsp salt
- 2 cups rhubarb (sliced)
- 3 eggs
- 1 1/4 cups sugar
- 1/2 cup all-purpose flour
- 1/4 cup freshly squeezed lemon juice
- 2 tbsp lemon zest
- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the crust by combining 1 cup flour, 1/4 cup sugar, and salt in a bowl. Add cold butter and mix until crumbly. Press into the bottom of a greased 9×9 inch baking pan.
- Bake the crust for about 20 minutes until lightly golden.
- For the filling, whisk together eggs and remaining sugar until combined. Stir in the flour, then add lemon juice, lemon zest, vanilla extract, and rhubarb slices.
- Pour the filling over the baked crust evenly.
- Bake again for an additional 30-35 minutes until set.
- Allow cooling completely before cutting into squares.
