Ingredients
- 2 pounds boneless chicken thighs or breasts
- 1/2 cup soy sauce (or gluten-free tamari)
- 1/4 cup brown sugar (or honey/maple syrup)
- 3 cloves garlic (minced)
- 1 teaspoon ground ginger
- 1 can pineapple chunks (in juice)
- 1 cup bell peppers (sliced)
Instructions
- Prepare the ingredients by chopping bell peppers and mincing garlic.
- In the slow cooker, layer the chicken at the bottom. Add soy sauce, brown sugar, minced garlic, ground ginger, and pepper.
- Pour in pineapple chunks with juice and top with sliced bell peppers.
- Cover and cook on low for about 6 hours or high for approximately 3 hours until chicken is tender.
- Shred the chicken directly in the crockpot and mix everything together before serving.
