- 1/2 pound pasta of choice
- 1 cup pitted large green olives, roughly chopped
- 100 g feta cheese, cubed
- 1/3 cup extra virgin olive oil
- 1/4 cup olive brine
- 1 clove fresh minced garlic
- Juice and zest of 1 lemon
- Black pepper to taste
Instructions
- Boil water in a large pot and cook the pasta according to package instructions until al dente. Drain and rinse with cold water; set aside.
- In a mason jar, combine olive oil, olive brine, minced garlic, lemon zest and juice, and black pepper. Shake well to mix.
- In a mixing bowl, combine cooked pasta, chopped olives, and feta cheese cubes. Drizzle the dressing over the mixture and toss gently until evenly coated.
- Adjust seasoning if needed and serve immediately or chill for enhanced flavors.
