Ingredients

  • 2 green onions, finely chopped
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon gochugaru (Korean red pepper flakes)
  • 1 clove garlic, minced
  • 1 teaspoon toasted sesame seeds

Instructions

  1. Slice the cucumbers thinly and sprinkle with salt in a colander. Let sit for about 10 minutes to draw out moisture.
  2. Rinse the salted cucumbers under cold water, gently squeezing them to remove excess moisture. Transfer to a mixing bowl.
  3. Add chopped green onions, sesame oil, rice vinegar, soy sauce, sugar, gochugaru, and minced garlic to the bowl. Toss until well combined.
  4. Serve immediately, garnished with toasted sesame seeds.
