Ingredients
- 2 English cucumbers, thinly sliced
- 1 teaspoon salt
- 2 green onions, finely chopped
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1 teaspoon gochugaru (Korean red pepper flakes)
- 1 clove garlic, minced
- 1 teaspoon toasted sesame seeds
Instructions
- Slice the cucumbers thinly and sprinkle with salt in a colander. Let sit for about 10 minutes to draw out moisture.
- Rinse the salted cucumbers under cold water, gently squeezing them to remove excess moisture. Transfer to a mixing bowl.
- Add chopped green onions, sesame oil, rice vinegar, soy sauce, sugar, gochugaru, and minced garlic to the bowl. Toss until well combined.
- Serve immediately, garnished with toasted sesame seeds.
