Ingredients
- 2 peaches (peeled and diced)
- 1 mango (peeled, cored, and diced)
- 4 kiwis (peeled and diced)
- 16 oz strawberries (hulled and diced)
- 1 tablespoon fresh lemon juice
- 2 tablespoons honey
- 2 tablespoons fresh basil (chopped)
- 10 tortillas (for cinnamon sugar chips)
- 1/3 cup granulated sugar
- 1 teaspoon cinnamon
- Coconut oil cooking spray (or melted butter)
Instructions
- Chop all fruits into small pieces and place in a large mixing bowl.
- In a small bowl, mix lemon juice and honey; pour over fruit and toss gently.
- Cover the mixture and refrigerate while preparing cinnamon chips.
- Preheat oven to 350°F. Line baking sheets with parchment paper.
- Mix sugar and cinnamon in a small bowl; spray tortillas with cooking spray.
- Sprinkle cinnamon sugar on both sides of tortillas, cut into triangles.
- Bake for 10-12 minutes until crispy; cool before serving.
- Stir in chopped basil before serving with warm cinnamon sugar chips.
