- 1 cup plain Greek yogurt

- 2.5 pounds boneless skinless chicken thighs
- 0.5 English cucumber, grated and drained
- 1 to 2 cloves garlic, minced (for tzatziki)
- 1 tablespoon fresh lemon juice or red apple vinegar (for tzatziki)
- Fresh dill, minced (for tzatziki)
- Pita breads or flatbreads, warmed
- Ripe tomatoes, quartered
- Thinly sliced cucumbers and red onion
Instructions
- Prepare the marinade by whisking together Greek yogurt, olive oil, lemon juice, garlic, oregano, paprika, and salt in a mixing bowl. Coat the chicken thighs evenly in the marinade and refrigerate for at least 30 minutes or overnight for best flavor.
- Make the tzatziki sauce by grating the cucumber and squeezing out excess moisture. Mix the drained cucumber with Greek yogurt, minced garlic, lemon juice or vinegar, dill, salt, and black pepper until well combined.
- Preheat your grill or grill pan over medium-high heat and cook the marinated chicken for about 6 to 8 minutes per side until fully cooked through. Let it rest for 5 minutes before slicing into thin strips.
- Assemble your gyros by warming pita bread and spreading tzatziki on top. Add sliced chicken along with tomatoes, cucumbers, red onion, and any additional toppings desired.
