  • 1 teaspoon fresh mint
  • 1 pound ground chicken
  • 1 egg
  • 1/2 cup almond flour
  • 1 teaspoon kosher salt
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon dried basil
  • 1 teaspoon dried dill
  • 1/2 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon fresh mint (packed and chopped)
  • 15 cherry tomatoes (halved)
  • 2 cups English cucumber (diced)
  • 1 cup kalamata olives
  • 1/2 cup red onion (diced)
  • 2 tablespoons homemade Greek vinaigrette (or store-bought)
  • Crumbled feta cheese
  • Cooked rice of your choice
  • Lemon orzo pasta
  • Pita bread
  • Quick pickled onions

Instructions

  1. In a mixing bowl, combine the mayonnaise, diced cucumber, lemon juice, minced garlic, kosher salt, ground black pepper, dried dill, and fresh mint. Mix well until smooth. Adjust seasoning as necessary. Set aside in the refrigerator to chill.
  2. Preheat your oven to 400°F (200°C). In a large mixing bowl, combine ground chicken, egg, almond flour, kosher salt, dried oregano leaves, dried basil, dried dill, onion powder, garlic powder, ground black pepper, and chopped mint. Mix thoroughly until all ingredients are incorporated.
  3. Using your hands or a scoop, form small meatballs about 1 inch in diameter. Place formed meatballs on a baking sheet lined with parchment paper.
  4. Bake in preheated oven for about 15 minutes or until they reach an internal temperature of 165°F (74°C). Remove from oven and let cool slightly before serving.
  5. Arrange meatballs on a platter alongside tzatziki sauce. Garnish with halved cherry tomatoes, diced cucumbers, kalamata olives, diced red onion, crumbled feta cheese and drizzle additional Greek vinaigrette if desired. Enjoy with rice or pita bread!
