- 4 small boneless skinless chicken breasts
- 4 oz fresh mozzarella cheese
- 10.5 oz cherry tomatoes
- Fresh basil leaves
- 1 teaspoon olive oil
- 1 clove garlic, minced
- 1/2 cup balsamic vinegar
- 1/4 cup red apple vinegar
- 1 tablespoon pure maple syrup (or honey)

- 1 teaspoon salt
- 1/2 teaspoon pepper

Instructions
- Prepare the balsamic sauce by heating olive oil and minced garlic in a saucepan. Add balsamic vinegar, red apple vinegar, and maple syrup; simmer until thickened.
- Season chicken breasts with salt and pepper; grill on medium-high heat for about 10 minutes total, flipping halfway through.
- Place mozzarella slices on top of the chicken during the last 2 minutes of grilling until melted.
- Toss halved cherry tomatoes with the balsamic sauce.
- Serve grilled chicken topped with the tomato-balsamic mixture and garnish with basil.
