Ingredients

Scale
  • 4 skinless boneless chicken breasts (½ inch thick)
  • ⅓ cup olive oil
  • ½ cup orange juice
  • ⅓ cup honey
  • ¼ cup lemon juice
  • ¼ cup apple cider vinegar
  • ¼ cup soy sauce
  • 1 teaspoon ground ginger
  • 5 cloves garlic (minced)
  • Salt and pepper to taste
  • Assorted vegetables (red and orange peppers, sweet onion) for grilling

Instructions

  1. Prepare the Marinade: In a large sealable container, mix olive oil, orange juice, honey, lemon juice, apple cider vinegar, soy sauce, ginger, garlic, salt, and pepper. Reserve ¼ cup of the marinade.
  2. Marinate the Chicken: Add the chicken breasts to the marinade and coat evenly. Refrigerate for about 30 minutes.
  3. Prep the Vegetables: In a resealable bag, combine sliced peppers and onions with olive oil, salt, and pepper. Seal tightly and toss to coat.
