- 4 skinless boneless chicken breasts (½ inch thick)
- ⅓ cup olive oil
- ½ cup orange juice
- ⅓ cup honey
- ¼ cup lemon juice
- ¼ cup apple cider vinegar
- ¼ cup soy sauce
- 1 teaspoon ground ginger
- 5 cloves garlic (minced)
- Salt and pepper to taste
- Assorted vegetables (red and orange peppers, sweet onion) for grilling
Instructions
- Prepare the Marinade: In a large sealable container, mix olive oil, orange juice, honey, lemon juice, apple cider vinegar, soy sauce, ginger, garlic, salt, and pepper. Reserve ¼ cup of the marinade.
- Marinate the Chicken: Add the chicken breasts to the marinade and coat evenly. Refrigerate for about 30 minutes.
- Prep the Vegetables: In a resealable bag, combine sliced peppers and onions with olive oil, salt, and pepper. Seal tightly and toss to coat.
- Grill Setup: Preheat your grill to 400°F. Grease the grill racks lightly with oil.
- Grill Chicken: Place marinated chicken on the grill. Sear each side for about 1 minute before lowering heat to 350°F. Grill covered for about 6 minutes.
- Baste & Flip: Baste one side of each chicken breast with reserved marinade before flipping gently. Close lid and cook for an additional minute.
- Check Doneness: Ensure internal temperature reaches at least 165°F before removing from grill.
- Rest & Serve: Let chicken rest for about 5 minutes before slicing or serving.
