Ingredients
- 2 lbs boneless, skinless chicken thighs (or breasts)
- 2 tablespoons olive oil
- Juice of 2 lemons
- Zest of 2 lemons
- 2 teaspoons minced garlic
- 2 tablespoons fresh thyme (or dried)
- 2 tablespoons fresh rosemary (or dried)
- Salt and black pepper to taste
- Cooking oil for grill grates
Instructions
- In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
- Place chicken in a resealable plastic bag or shallow dish and pour marinade over it. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or overnight for best results).
- Preheat the grill to medium-high heat and lightly oil the grates.
- Remove chicken from marinade, discarding any leftover marinade. Grill each side for about 6 minutes or until internal temperature reaches 165°F (75°C). Let rest before slicing.
