Ingredients
- 4 portions (8 oz each) Mahi Mahi
- ½ fresh pineapple (peeled, cored, sliced for grilling)
- 1 medium red bell pepper (seeded, diced)
- ½ medium red onion (diced)
- ½ bunch cilantro (chopped)
- 1 serrano pepper (seeded, chopped)
- Marinade: rice apple vinegar, olive oil, ground cumin, butter, lemon juice, minced garlic
- Salt and pepper to taste
Instructions
- Prepare the salsa by grilling pineapple slices until marked. Chop and mix with diced bell pepper, onion, cilantro, serrano pepper, salt, and pepper in a bowl.
- Whisk marinade ingredients together in another bowl and soak the Mahi Mahi for 30 minutes.
- Preheat the grill over medium-high heat.
- Grill the fish for 4-5 minutes on each side until it flakes easily.
- Serve topped with pineapple salsa and enjoy.
