Ingredients
- 4 ripe peaches (halved and pitted)
- 1 cup fresh blueberries
- 4 cups mixed greens (arugula, spinach, or spring mix)
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup toasted pecans or walnuts (roughly chopped)
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat and lightly oil the grates.
- Brush peach halves with olive oil; place cut-side down on the grill for 3-4 minutes until charred and softened. Remove from grill, let cool slightly, then slice into wedges.
- In a jar or bowl, combine dressing ingredients (olive oil, balsamic vinegar, honey, Dijon mustard, salt, pepper) and whisk or shake until well combined.
- In a large bowl, layer mixed greens topped with grilled peach wedges, blueberries, feta cheese (if using), and toasted nuts.
- Drizzle dressing over the salad and toss gently to combine.
- Serve immediately as an appetizer or light lunch.
