Ingredients
- 1 1/2 pounds Russet potatoes (cut into 1-inch pieces)
- 4 tablespoons butter (melted)
- 1 1/2 tablespoons ranch seasoning powder
- 1 cup shredded cheddar cheese
- 6 slices turkey bacon (cooked and crumbled)
- 1/4 cup sour cream
- 2 tablespoons chives (sliced)
- Cooking spray
Instructions
- Preheat your grill to medium heat or oven to 400°F.
- Cut four large squares of aluminum foil and coat with cooking spray.
- In a mixing bowl, combine diced Russet potatoes, melted butter, and ranch seasoning; toss well.
- Divide the seasoned potatoes among the foil squares and seal tightly into packets.
- Cook on the grill or in the oven for 25-30 minutes or until tender when pierced with a fork.
- Carefully open each packet, add cheddar cheese and crumbled turkey bacon, then return to heat for an additional 3-5 minutes until cheese melts.
- Top with sour cream and garnish with sliced chives before serving.
