- 2 medium zucchinis
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
- 6 tablespoons hummus (any flavor)
- 1 roasted red bell pepper
- 2 tablespoons fresh parsley (for garnish)
Instructions
- Preheat the grill to medium-high heat.
- Slice zucchinis lengthwise into strips about 1/4 inch thick.
- Brush zucchini strips with olive oil and season with salt and pepper.
- Grill the zucchini for 2 to 3 minutes on each side until tender.
- Spread about 2 teaspoons of hummus on each grilled strip.
- Top with pieces of roasted red pepper.
- Roll each zucchini slice tightly around the filling and serve immediately.
