Ingredients
- 1 pound elbow macaroni
- 1 cup mayonnaise
- 1/4 cup sweet pickle relish
- 2 tablespoons apple cider vinegar
- 1 tablespoon yellow mustard
- 1 teaspoon salt (Adjust to taste)
- 1/2 teaspoon black pepper (Adjust to taste)
- 1/4 cup chopped celery
- 1/4 cup chopped onion
- 2–3 chopped hard-boiled eggs (optional)
- Paprika (for garnish)
Instructions
- Cook the elbow macaroni in boiling water according to package directions until al dente. Drain and let cool.
- In a mixing bowl, whisk together mayonnaise, sweet pickle relish, apple cider vinegar, yellow mustard, salt, and black pepper until smooth.
- Add the cooled macaroni, chopped celery, and onion to the dressing and mix gently until well combined.
- If desired, fold in chopped hard-boiled eggs for added texture.
- Cover and refrigerate for at least 30 minutes before serving. Garnish with paprika just before enjoying.
