Ingredients
- 1 lb boneless, skinless chicken breasts (cut into cubes)
- 20 oz can pineapple slices (cut into chunks)
- 1/4 cup pineapple juice
- 1 tbsp fresh ginger (minced)
- 6 cloves fresh garlic (minced)
- 1/4 cup dark brown sugar
- 1/2 cup soy sauce
Instructions
- In a bowl, whisk together pineapple juice, ginger, garlic, dark brown sugar, and soy sauce until the sugar dissolves. Reserve half for later.
- In a mixing bowl, combine chicken and pineapple chunks with half of the marinade. Cover and refrigerate for 20-25 minutes.
- Heat the remaining marinade in a saucepan over medium heat; simmer until slightly thickened.
- Thread marinated chicken and pineapple onto skewers.
- Preheat a grill pan over medium-high heat. Cook skewers for about 15 minutes, turning occasionally and basting with the thickened sauce until chicken reaches an internal temperature of 165°F.
