- 1 cup cold butter (or coconut oil)
- 8 oz almond paste (or marzipan)
- ¼ cup butter (or dairy-free spread)
- 1 large egg white (or aquafaba)
- apricot preserves (or preferred fruit variety)
Instructions
- In a mixing bowl, combine flour and confectioners' sugar. Cut in cold butter until crumbly.
- Add egg yolk and mix; gradually add ice water until dough forms. Refrigerate for 30 minutes.
- Preheat oven to 350°F (175°C). Roll out chilled dough to ¼ inch thick, cut into circles, and press into tartlet pans.
- Mix almond paste, softened butter, egg white, and almond extract until smooth; fill each crust evenly.
- Bake for about 25 minutes or until golden brown. Cool slightly before topping with apricot preserves.
