- 750 ml lemon juice (freshly squeezed)
- 8 lemons (zest only)
- 4 cups water
- 3 cups granulated sugar
Instructions
- Prepare the lemon zest by peeling the lemons carefully to avoid the white pith. Place the peels in a glass container and pour in the lemon juice. Seal tightly and let steep in a cool, dark place for 2 weeks to 1 month, shaking occasionally.
- After steeping, create a simple syrup by combining sugar and water in a medium pot over medium heat until dissolved. Chill in the refrigerator for 10-15 minutes.
- Strain the lemon-infused liquid through a fine strainer into another container, pressing down on the peels to extract maximum flavor. Mix with the cooled simple syrup.
- Transfer the mixture into glass bottles for storage and label them accordingly.
