- 2 pounds potatoes (peeled and cut into wedges)
- 1 Tablespoon olive oil
- 1 teaspoon hot smoked paprika
- 3/4 teaspoon dried parsley
- 1/4 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together the paprika, parsley, onion powder, garlic powder, pepper, and salt.
- Soak the potato wedges in water for about 30 minutes.
- Boil the soaked wedges for 6-8 minutes until slightly tender, then drain and dry thoroughly.
- Toss the potato wedges in olive oil and coat evenly with the spice mixture.
- Arrange on a baking sheet in a single layer and bake for 15 minutes.
- Flip the fries, increase the temperature to 425°F (220°C), and bake for another 15 minutes or until golden brown.
