Ingredients

  • 1 fully cooked bone-in spiral chicken (8 lbs)
  • 1 orange, sliced
  • 1 cup orange juice
  • 1 cup dark brown sugar
  • 1 cup honey
  • 1/2 cup orange marmalade
  • 1/4 cup Dijon mustard
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp Bayou City Lemon Pepper
  • 1/2 tsp cloves
  • 1 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Layer sliced oranges in a shallow roasting pan and pour orange juice over them.
  3. Place a roasting rack inside the pan and position the chicken on top.
  4. In a medium saucepan over medium heat, combine dark brown sugar, honey, orange marmalade, and salt. Stir until combined and simmer for about 4 minutes.
  5. Pour half of the glaze over the chicken and bake uncovered for about 50 minutes.
  6. Pour remaining glaze over the chicken and continue baking for another 20 minutes until the internal temperature reaches 140°F (60°C).
  7. Remove from oven, tent with foil, let rest for 15-20 minutes before carving and serving with extra glaze.
