Ingredients
- 1 fully cooked bone-in spiral chicken (8 lbs)
- 1 orange, sliced
- 1 cup orange juice
- 1 cup dark brown sugar
- 1 cup honey
- 1/2 cup orange marmalade
- 1/4 cup Dijon mustard
- 1 tsp ground cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp Bayou City Lemon Pepper
- 1/2 tsp cloves
- 1 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- Layer sliced oranges in a shallow roasting pan and pour orange juice over them.
- Place a roasting rack inside the pan and position the chicken on top.
- In a medium saucepan over medium heat, combine dark brown sugar, honey, orange marmalade, and salt. Stir until combined and simmer for about 4 minutes.
- Pour half of the glaze over the chicken and bake uncovered for about 50 minutes.
- Pour remaining glaze over the chicken and continue baking for another 20 minutes until the internal temperature reaches 140°F (60°C).
- Remove from oven, tent with foil, let rest for 15-20 minutes before carving and serving with extra glaze.
