Instructions
- Preheat your oven to 375°F and brush the madeleine pan with melted butter.
- In a bowl, sift together almond flour, coconut flour, and salt.
- Beat egg yolks and whole egg until light and fluffy (about 5 minutes).
- Mix in monkfruit sweetener and vanilla; continue beating until ribbons form.
- Gently fold the dry ingredients into the wet mixture, then mix in melted butter.
- Fill each cavity of the madeleine pan with batter.
- Bake for 10 minutes until golden brown, then cool on a tea towel before serving.
