- 1 lemon
- 1/4 cup plain Greek yogurt
- 4 boneless skinless chicken breasts
- 1 pound red potatoes (sliced)
- 1 pound fresh green beans
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Zest and juice the lemon. In a plastic bag, mix Greek yogurt, lemon juice, thyme, garlic, salt, and pepper to create the marinade. Add chicken breasts, seal tightly, and marinate for at least 20 minutes.
- In a mixing bowl, combine sliced potatoes, green beans, olive oil, remaining salt, pepper, and reserved lemon zest.
- Preheat your grill to medium-high heat or oven to 350°F.
- Cut four squares of heavy-duty aluminum foil. Spray the dull side with olive oil.
- Divide the vegetable mixture among packets and place one marinated chicken breast on top of each.
- Seal packets securely; add 1 tablespoon water to each packet before sealing completely.
- Cook on the grill for about 20 minutes or bake for 25-30 minutes until chicken reaches an internal temperature of 165°F.
