- 4 ounces mascarpone cheese
- 1 cup baby spinach
- Salt and black pepper to taste
- ½ cup grated parmesan cheese (plus more for serving)
Instructions
- Boil water in a large pot; cook pasta until al dente. Reserve ½ cup of pasta water before draining.
- In a saucepan, heat olive oil over medium heat; sauté garlic until fragrant. Add vinegar, lemon juice, and zest; simmer for three minutes.
- Stir in mascarpone cheese, spinach, salt, and pepper until the cheese melts and spinach wilts.
- Combine drained pasta with the sauce; add reserved pasta water as needed for creaminess. Mix in parmesan cheese before serving.
