Instructions
- In a medium bowl, mix warm water, sugar, and yeast; let sit for about 5 minutes until frothy.
- In a large bowl, combine flour and salt. Add the yeast mixture and olive oil; stir until dough forms.
- Knead dough on a floured surface for 8-10 minutes until smooth; place in an oiled bowl and let rise for 1 to 1.5 hours until doubled in size.
- Preheat oven to 475°F (245°C).
- Mix ricotta, mozzarella, Parmesan, lemon zest, and lemon juice in a bowl; set aside.
- Roll out the risen dough into a thin round shape. Transfer to parchment paper or pizza stone.
- Spread cheese mixture evenly over dough and sprinkle fresh thyme on top.
- Bake for about 10-12 minutes until crust is golden brown and cheese is bubbly.
