  • ¼ cup powdered sugar
  • ¼ tsp salt
  • ½ cup butter (cut into 8 pieces)
  • 1 ¼ cup granulated sugar
  • ¼ cup all-purpose flour
  • 4 large eggs
  • 2 tsp lime zest
  • ⅓ cup fresh lime juice
  • Drop of green (+ yellow) food coloring (optional)

Instructions

  1. Preheat your oven to 350°F and prepare an 11×7-inch baking dish lined with parchment paper.
  2. For the crust, blend flour, powdered sugar, salt, and butter in a food processor until crumbly. Press into the prepared dish and bake for 18-20 minutes until golden.
  3. In a bowl, whisk together granulated sugar and flour. Add eggs one at a time, mixing well after each addition. Stir in lime zest and juice until smooth.
  4. Pour the filling over the baked crust and return to the oven for 18-20 minutes until set.
  5. Allow to cool completely before refrigerating for 1-2 hours. Cut into squares and serve chilled.
