- 1 cup all-purpose flour
- ¼ cup powdered sugar
- ¼ tsp salt
- ½ cup butter (cut into 8 pieces)
- 1 ¼ cup granulated sugar
- ¼ cup all-purpose flour
- 4 large eggs
- 2 tsp lime zest
- ⅓ cup fresh lime juice
- Drop of green (+ yellow) food coloring (optional)
Instructions
- Preheat your oven to 350°F and prepare an 11×7-inch baking dish lined with parchment paper.
- For the crust, blend flour, powdered sugar, salt, and butter in a food processor until crumbly. Press into the prepared dish and bake for 18-20 minutes until golden.
- In a bowl, whisk together granulated sugar and flour. Add eggs one at a time, mixing well after each addition. Stir in lime zest and juice until smooth.
- Pour the filling over the baked crust and return to the oven for 18-20 minutes until set.
- Allow to cool completely before refrigerating for 1-2 hours. Cut into squares and serve chilled.
