Ingredients
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon fresh lemon juice
- 1 teaspoon Tabasco
- 1 3/4 cups water
- 2 cups all-purpose flour (plus more for dusting)
- Salt
- 1/4 teaspoon baking soda
- 1 quart vegetable oil (for frying)
- 2 pounds skinless cod fillets (cut into 4-inch pieces)
Instructions
- In a bowl, whisk together the mayonnaise, ketchup, lemon juice, and Tabasco until well combined. Set aside.
- In a mixing bowl, combine water with flour, salt, and baking soda using an electric mixer on low speed until smooth. Strain to remove lumps.
- Heat vegetable oil in a large saucepan to 360°F. Dust cod fillets with flour, dip in batter and fry until golden brown (about 7 minutes). Drain on paper towels.
- Serve hot fried cod with the prepared Marie Rose Sauce.
