Instructions

  1. In a bowl, whisk together the mayonnaise, ketchup, lemon juice, and Tabasco until well combined. Set aside.
  2. In a mixing bowl, combine water with flour, salt, and baking soda using an electric mixer on low speed until smooth. Strain to remove lumps.
  3. Heat vegetable oil in a large saucepan to 360°F. Dust cod fillets with flour, dip in batter and fry until golden brown (about 7 minutes). Drain on paper towels.
