  • 1 cup Cherry Tomatoes (diced)
  • 1 cup Chopped Onions
  • 2 cloves Garlic (minced)
  • 1 tbsp Fresh Herbs (such as Parsley, Thyme, Oregano)
  • Olive Oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the bell peppers and cut off the tops; remove seeds and set aside.
  3. In a mixing bowl, combine ground beef, chopped olives, feta cheese, couscous, pine nuts, cherry tomatoes, onions, garlic, and fresh herbs. Mix well.
  4. Generously fill each bell pepper with the prepared mixture and drizzle with olive oil.
  5. Place stuffed peppers in a baking dish and bake for about 45 minutes until tender.
  6. Serve warm with additional feta cheese crumbled on top.
