- 4 Bell Peppers (any color)
- 1 lb Ground Beef (or ground turkey/chicken)
- 1/2 cup Kalamata Olives (chopped)
- 1 cup Feta Cheese (crumbled; vegan feta optional)
- 1 cup Pearled Couscous (or orzo/farro)
- 1/4 cup Pine Nuts (optional)
- 1 cup Cherry Tomatoes (diced)
- 1 cup Chopped Onions
- 2 cloves Garlic (minced)
- 1 tbsp Fresh Herbs (such as Parsley, Thyme, Oregano)
- Olive Oil
Instructions
- Preheat your oven to 375°F (190°C).
- Wash the bell peppers and cut off the tops; remove seeds and set aside.
- In a mixing bowl, combine ground beef, chopped olives, feta cheese, couscous, pine nuts, cherry tomatoes, onions, garlic, and fresh herbs. Mix well.
- Generously fill each bell pepper with the prepared mixture and drizzle with olive oil.
- Place stuffed peppers in a baking dish and bake for about 45 minutes until tender.
- Serve warm with additional feta cheese crumbled on top.
