- 1 dozen hard-boiled eggs
- 4 ounces Mexican chicken sausage
- 1 tablespoon finely chopped cilantro (plus sprigs for garnish)
- 1/4 cup roasted red bell pepper (finely diced)
- 1 tablespoon apple juice vinegar
- 3 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- Hard boil the eggs by placing them in cold water and simmering for 15 minutes. Transfer to an ice bath to cool.
- Slice the cooled eggs in half lengthwise and remove yolks into a mixing bowl.
- In a skillet, cook chicken sausage over medium heat until crisp.
- Combine egg yolks with cilantro, red pepper, apple juice vinegar, mayonnaise, Dijon mustard, salt, and pepper; mash until smooth.
- Fill egg whites with yolk mixture using a spoon or spatula.
- Top with cooked chicken sausage bits and garnish with cilantro.
