Ingredients
- 2 (15.24 ounce) boxes white cake mix
- 1 (3 ounce) lime jello
- 1 cup shredded coconut
- 1 teaspoon coconut extract
- 3 tablespoons green sprinkles
- 1 (16 ounce) key lime frosting tub
- 1 cup toasted coconut
- Zest of 2 limes
Instructions
- Preheat your oven to 350°F and spray the mini bundt pan with non-stick cooking spray.
- Prepare the cake mixes according to package instructions; divide the batter into two bowls.
- Mix shredded coconut and coconut extract into one bowl, then add lime jello to the other.
- Fill each bundt well with layers of coconut batter topped with lime batter.
- Bake for about 22 minutes until a toothpick comes out clean.
- Cool cakes in the pan for 20 minutes before transferring them to a wire rack.
- Melt key lime frosting in the microwave for about 30 seconds and drizzle over cooled cakes.
- Garnish with toasted coconut and lime zest before serving.
