- 8 ounces mixed mushrooms (cremini, shiitake, button)
- 2 tablespoons unsalted butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 teaspoons fresh thyme
- 2 tablespoons all-purpose flour
- 1 cup vegetable broth
- 1/2 cup heavy cream
- Salt and black pepper to taste
- 1 sheet puff pastry
- 1 cup shredded Gruyère cheese
- 1 large egg (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet over medium heat, melt the butter and sauté the onion and garlic until softened. Add the mixed mushrooms and thyme; cook until tender.
- Sprinkle flour into the skillet, stirring for about 2 minutes. Gradually add vegetable broth until thickened. Remove from heat; stir in heavy cream and season with salt and pepper.
- Roll out puff pastry and cut circles to fit your baking dishes. Fill each dish with the mushroom mixture, cover with pastry, sealing edges gently.
- Brush each pie with beaten egg for shine and bake for about 25 minutes or until golden brown.
