Ingredients
- 2 tablespoons salted butter
- 1 pound boneless chicken breasts or thighs, cubed
- 1 yellow onion, sliced
- 2 poblano peppers, chopped
- 3 cloves garlic, minced
- 1 pound short cut pasta
- 2 cups milk
- 2 ounces cream cheese
- 1/2 cup ranch dressing
- 1 cup grated parmesan cheese
- Cajun seasoning to taste
- Chopped parsley for garnish
Instructions
- In a large pot over medium-high heat, melt the butter. Add cubed chicken and Cajun seasoning; cook until no longer pink (about 5 minutes). Remove chicken and set aside.
- In the same pot, add onion, poblano peppers, garlic, and additional Cajun seasoning; sauté until tender.
- Stir in short cut pasta and chopped parsley with water. Cook until pasta is al dente (approximately 8 minutes).
- Lower heat and mix in milk, cream cheese, ranch dressing, and parmesan cheese until creamy.
- Return cooked chicken to the pot; gently combine all ingredients.
- Serve hot, garnished with extra parmesan and fresh parsley if desired.
