Ingredients
- 2 Bison New York Strip Steaks
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 1/2 red bell pepper, sliced
- 1/2 orange or yellow bell pepper, sliced
- 2 tablespoons coarse grain mustard
- 1/2 cup water
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium-high heat and add two tablespoons of olive oil. Sauté the onion and bell peppers until browned, about 8 minutes.
- In a small bowl, whisk together mustard and water. Add to the skillet, cooking until most liquid evaporates; season with salt and pepper.
- Let bison steaks sit at room temperature for 30 minutes. Brush with one tablespoon of oil and season.
- Heat a cast iron skillet over medium-high heat with a couple of tablespoons of oil. Sear steaks for 4 minutes on each side for medium-rare; let rest for 5 minutes before slicing.
- Serve the steak topped with the onion and pepper mixture.
