- 2 cups raw cashews (soaked)
- 1/2 cup Medjool dates (pitted and soaked)
- Juice of 1/2 lemon
- 1/3 cup pureed pumpkin
- 1 tablespoon pure vanilla extract
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
Instructions
- Soak the cashews and dates in hot water for at least 15 minutes to soften.
- Drain both ingredients and combine them in a food processor or high-speed blender with lemon juice. Blend until smooth.
- Add pureed pumpkin, vanilla extract, cinnamon, and nutmeg to the mixture. Process until creamy.
