- 1 lb boneless, skinless chicken breasts or thighs
- 2 tbsp olive oil
- 1 tbsp lime juice (plus more for serving)
- 1 cup fresh pineapple chunks
- 8 small corn or whole wheat tortillas
- 1/2 cup diced red onion
- 1/2 cup chopped fresh cilantro
- Optional toppings: avocado slices, crumbled queso fresco or feta cheese, jalapeño
Instructions
- In a mixing bowl, whisk olive oil, lime juice, chili powder, smoked paprika, cumin, garlic powder, salt, and pepper to create the marinade.
- Add chicken pieces to the marinade and toss until well-coated. Let marinate for at least 15 minutes.
- While marinating, prepare salsa by mixing diced red onion, cilantro, jalapeño (if using), lime juice, and salt in a separate bowl.
- Heat a skillet over medium-high heat. Cook marinated chicken for 5-7 minutes until golden brown and cooked through (165°F internal temperature).
- Warm tortillas in a dry skillet or microwave.
- Assemble tacos by layering cooked chicken, pineapple chunks, salsa, avocado slices, and cheese on each tortilla.
- Serve immediately with extra lime wedges.
