- 2 cups cherry tomatoes
- 2 tablespoons extra virgin olive oil
- 2 garlic cloves, minced
- 1 ball of burrata cheese (4 oz)
- Fresh basil leaves, torn
- Kosher salt
- Freshly ground black pepper
- Crushed red pepper flakes (optional, for heat)
- Flaky sea salt (optional, for finishing)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine cherry tomatoes, olive oil, minced garlic, salt, and pepper. Toss to coat.
- Spread the mixture on a baking sheet and roast for 20-25 minutes until tomatoes are blistered.
- Remove from the oven and create a space for the burrata in the center of the tomatoes. Bake for an additional 5-7 minutes until warm.
- Garnish with torn basil leaves and serve hot with crusty bread or fresh vegetables.
