Ingredients
- 4 tablespoons (57 grams) unsalted butter
- 1 1/4 cups (296 grams) whole milk
- 2 large eggs (lightly beaten)
- 1/4 cup (84 grams) honey
- 2 1/4 teaspoons (1 packet) instant yeast
- 1 1/2 teaspoons fine sea salt
- 4 3/4 cups (603 grams) bread flour
- 1 egg (lightly beaten) for topping
- 2 tablespoons (28 grams) unsalted butter for topping
- 1 tablespoon (21 grams) honey for topping
- Flaky sea salt for sprinkling
Instructions
- Melt the butter in a saucepan, add the milk, and heat until warm (115-120°F).
- In a stand mixer bowl, combine warm milk mixture with eggs, honey, yeast, and salt. Gradually mix in half of the flour.
- Attach the dough hook and mix on medium-low speed, adding the remaining flour until a soft dough forms.
- Knead on medium speed for about 10 minutes until smooth. Transfer to a greased bowl and cover; let rise until doubled (90 minutes to 2 hours).
- Deflate the dough, divide into 15 pieces, shape into balls, and place seam-side down in a greased pan. Cover and let rise again until doubled (about 1 hour).
- Preheat oven to 375°F. Brush rolls with beaten egg and bake for 20-22 minutes until golden brown.
- While baking, melt additional butter; stir in honey for glaze. Brush over hot rolls and sprinkle with flaky sea salt.
