- 2 tablespoons olive oil
- 1 pound ground turkey
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 1/2 pounds zucchini, diced
- 2 cups cooked groats (or brown rice/quinoa)
- 1 can (14.5 oz) diced tomatoes
- 1/2 teaspoon oregano
- 1/2 teaspoon smoked paprika
- 1/2 cup fresh basil, finely chopped
- 7 ounces shredded aged cheddar
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, warm olive oil. Sauté onion and garlic for about 3–4 minutes until softened.
- Add ground turkey, breaking it apart while cooking until browned.
- Stir in diced zucchini and cook for an additional 5 minutes until slightly tender.
- Mix in cooked groats (or your choice of grain), diced tomatoes, oregano, smoked paprika, and fresh basil until well combined.
- Transfer the mixture to a baking dish and sprinkle shredded cheddar cheese evenly on top.
- Bake for about 20 minutes or until the cheese is bubbly and golden brown.
