- 1 packet (2 1/4 teaspoons) instant yeast
- 1 tablespoon light brown sugar
- 1 1/2 cups warm water (about 110°F)
- 1 tablespoon cooled melted butter or neutral oil
- 3/4 teaspoon fine sea salt
- 4 ¼ cups all-purpose flour
- 6 cups water (for baking soda bath)
- 1/4 cup baking soda
- 1 large egg
- 1 tablespoon water
- Pretzel salt or coarse sea salt
Instructions
- In a large mixing bowl, combine warm water, instant yeast, and light brown sugar. Stir until dissolved and let sit for about 5 minutes until frothy.
- Add melted butter (or oil) and fine sea salt to the yeast mixture. Gradually stir in the flour until a dough forms.
- Knead on a floured surface until smooth, about 5-7 minutes. Place in a covered bowl in a warm area to rise for about an hour or until doubled in size.
- Bring water to a boil in a large pot, then carefully add baking soda.
- Punch down the risen dough and divide into small pieces; shape each piece into balls or knots.
- Boil each pretzel bite in the baking soda bath for about 30 seconds before transferring to parchment-lined baking sheets.
- Whisk the egg with water; brush over pretzel bites and sprinkle with coarse salt.
- Preheat oven to 425°F (220°C) and bake for about 12-15 minutes until golden brown.
