  • 6 cups water (for baking soda bath)
  • 1/4 cup baking soda
  • 1 large egg
  • 1 tablespoon water
  • Pretzel salt or coarse sea salt

Instructions

  1. In a large mixing bowl, combine warm water, instant yeast, and light brown sugar. Stir until dissolved and let sit for about 5 minutes until frothy.
  2. Add melted butter (or oil) and fine sea salt to the yeast mixture. Gradually stir in the flour until a dough forms.
  3. Knead on a floured surface until smooth, about 5-7 minutes. Place in a covered bowl in a warm area to rise for about an hour or until doubled in size.
  4. Bring water to a boil in a large pot, then carefully add baking soda.
  5. Punch down the risen dough and divide into small pieces; shape each piece into balls or knots.
  6. Boil each pretzel bite in the baking soda bath for about 30 seconds before transferring to parchment-lined baking sheets.
  7. Whisk the egg with water; brush over pretzel bites and sprinkle with coarse salt.
  8. Preheat oven to 425°F (220°C) and bake for about 12-15 minutes until golden brown.
