  • ½ cup (1 stick or 113g) unsalted butter
  • 20 oz mini vegan marshmallows (divided)
  • 2 teaspoons vanilla extract
  • ¼ teaspoon kosher salt
  • 6 cups (160g) rice cereal

Instructions

  1. Grease a 9” x 9” square baking pan with cooking spray. Crush the freeze-dried strawberries and set aside.
  2. In a large pot, melt the butter over medium-low heat, then add 16 oz of mini vegan marshmallows until melted.
  3. Stir in crushed freeze-dried strawberries, vanilla extract, and salt until combined.
  4. Fold in rice cereal until coated; then add remaining marshmallows.
  5. Pour the mixture into the prepared pan, pressing down gently to set evenly. Top with additional strawberries.
  6. Allow to cool completely before cutting into squares and serving.
