- 1/2 lb. whole grain pasta (or gluten-free)
- 2 grilled chicken breasts (chopped)
- 1/2 pint cherry tomatoes (halved)
- 1 medium zucchini (diced)
- 1/2 large cucumber (peeled and diced)
- 1 bell pepper (diced)
- 1/2 large onion (diced)
- 8 oz Italian salad dressing
- Pine nuts, fresh basil, arugula (optional)
Instructions
- Cook the pasta according to package directions. Drain and rinse under cold water.
- In a large bowl, combine all vegetables: tomatoes, zucchini, cucumber, bell pepper, onion. If using olives, add them now.
- Stir in chopped chicken until mixed well.
- In a separate bowl, whisk the dressing ingredients together until smooth.
- Pour the dressing over the pasta salad mixture and toss to combine evenly.
- Garnish with fresh basil before serving.
