Ingredients

  • 2 grilled chicken breasts (chopped)
  • 1/2 pint cherry tomatoes (halved)
  • 1 medium zucchini (diced)
  • 1/2 large cucumber (peeled and diced)
  • 1 bell pepper (diced)
  • 1/2 large onion (diced)
  • 8 oz Italian salad dressing
  • Pine nuts, fresh basil, arugula (optional)

Instructions

  1. Cook the pasta according to package directions. Drain and rinse under cold water.
  2. In a large bowl, combine all vegetables: tomatoes, zucchini, cucumber, bell pepper, onion. If using olives, add them now.
  3. Stir in chopped chicken until mixed well.
  4. In a separate bowl, whisk the dressing ingredients together until smooth.
  5. Pour the dressing over the pasta salad mixture and toss to combine evenly.
  6. Garnish with fresh basil before serving.
